Ployes (one-sided pancakes)

Serves 6 – 8

1 cup light Acadian buckwheat flour

¼ cup quinoa flour or almond mean

1 tsp cream of tartar

½ tsp baking soda

½ tsp plain salt

¼ tsp xanthan gum

2 eggs, beaten

2 ¼ cup water

Combine dry ingredients.  Combine eggs with about half of the water then stir into dry ingredients.  Stir well and add remaining water while continuing to stir until well mixed.  Set aside while griddle heats up – this is a key step, otherwise the xanthan gum does not have time to develop.  Stir well before scooping batter.  Pour ~1/4 cup of batter onto very hot (400 oF) griddle and cook without flipping until cooked through.  The more holes you have, the better.  Wrap around sausage and dip in maple syrup or spread jam and roll it up or do whatever strikes your fancy!
