Berry Muffins

Berry Muffins

Serves 4

 

½ cup beet sugar

2 Tbsp shortening or coconut oil

2 Tbsp applesauce

1 egg

½ tsp vanilla extract

158 g (1 cup) Flour Mix

½ tsp cream of tartar

½ tsp xanthan gum

¼ tsp baking soda

¼ tsp plain salt

¼ cup milk

½ Tbsp water

1 cup berries

Cinnamon / sugar mixture

 

Combine dry ingredients and set aside.  In a large mixing bowl, cream together shortening and sugar with an electric mixer.  Add egg and vanilla; mix well.  Add applesauce, dry ingredients and milk.  Mix well.  Fold in berries.  Fill lined 8 cup muffin tin and sprinkle each muffin with a cinnamon/sugar mixture.  Bake at 350 oF for 38 minutes.

Variation: Add 1/2 tsp cinnamon and 1/4 tsp nutmeg to dry ingredients and substitute one finely diced apple for the cup of berries.
